Near La Paz there are incredible landscapes and whilst Thymann was in Bolivia documenting glaciers, mainly in the cold mountain region, he came across their culinary traditions.

Chuño is the product of a process involving the washing, freezing and trampling of root vegetables. In Bolivia’s La Paz region, potatoes are washed for up to one month before being taken to the Altiplano, where they are laid out to freeze at an altitude of about 4000m. The nightly frost gives the Chuño a sweet taste.
